The longer the carbon chains the higher the molecular weight of t6he fatty acids hence more energy that comes from a higher temperature.
- From a chemical standpoint, monounsaturated fats are simply fat molecules that have one unsaturated carbon bond in the molecule, this is also called a double bond. Oils that contain monounsaturated fats are typically liquid at room temperature but start to turn solid when chilled.
- In short: the kinks of unsaturated fat molecules keep them liquid at room temperature. Therefore, animal fat (mostly saturated) is solid at room temperature. Plant oils (mosly unsaturated) is liquid at room temperature. They solidify at room temperature because the molecules can pack together.
- There are two elements that are liquid in room temperature. Mercury (Hg) melts at 234.32 K - This is very interesting because all of Mercury's neighboring elements are solids at room temperature. Mercury is also much less reactive than Cadmium and Zinc which are directly above Mercury.
