Placebo. Alkaline diet (also known as the alkaline ash diet, alkaline acid diet, acid ash diet, and acid alkaline diet) describes a group of loosely related diets based on the misconception that different types of food can have an effect on the pH balance of the body.
Which foods are alkaline and which are acidic?
Some alkalizing (or neutral) foods and beverages you can incorporate into your diet include:
- soy, such as miso, soy beans, tofu, and tempeh.
- unsweetened yogurt and milk.
- most fresh vegetables, including potatoes.
- most fruits.
- herbs and spices, excluding salt, mustard, and nutmeg.
- beans and lentils.
Foods that are emphasized as part of an alkaline diet include whole fruits and vegetables, raw foods, green juices, beans, and nuts. Foods that are acidic and therefore limited on an alkaline diet include high-sodium foods, processed grains, too much meat and animal protein, added sugars, and conventional milk.
According to “The Acid Alkaline Food Guide,” potatoes are moderately alkaline-forming in the body. Baked potatoes, including the skins, are the most alkalizing, followed by mashed potatoes prepared with milk and butter.
First, a little chemistry: A pH level measures how acid or alkaline something is. A pH of 0 is totally acidic, while a pH of 14 is completely alkaline. A pH of 7 is neutral. Those levels vary throughout your body. Your blood is slightly alkaline, with a pH between 7.35 and 7.45.

The solution is neither acidic or basic. Because the base "soaks up" hydrogen ions, the result is a solution with more hydroxide ions than hydrogen ions. This kind of solution is alkaline. Acidity and alkalinity are measured with a logarithmic scale called pH.
The pH scale measures how acidic or alkaline a substance is. Substances with a pH of 7 are neutral, substances with a pH greater than 7 are alkaline (or 'basic') and substances with a pH lower than 7 are acidic. Alkalis are 'bases' that are soluble in water. (All alkalis are bases but not all bases are alkalis.)
Stay hydrated with alkaline beverages such as coconut water. Replace coffee -- which is highly acidic -- with green tea to get your caffeine fix. Dairy products are also acidic, so replace dairy milk with almond milk for your alkaline diet. Green drinks are also alkaline.
The commonly used antonym of acid is alkali, of acidic is alkaline. As you mention, acid/acidic refer to pH less than 7, alkali/alkaline to pH greater than 7, and neutral to pH equal to 7.
Certain food groups are considered acidic, alkaline or neutral:
- Acidic: Meat, poultry, fish, dairy, eggs, grains and alcohol.
- Neutral: Natural fats, starches and sugars.
- Alkaline: Fruits, nuts, legumes and vegetables.
Drinking natural alkaline water is generally considered safe, since it contains natural minerals. However, you should use caution with artificial alkaline water, which likely contains fewer minerals necessary for good health than its high pH would have you believe. Overuse may leave you deficient.
Acid-forming foods include most high-protein foods, such as meat, fish, eggs, and most legumes (beans and peas, except lentils, which are alkaline-forming). Sugar, coffee, alcohol, and most grains are also acid-forming.
Increasing your body's pH is called “alkalizing.” Lemon juice in its natural state is acidic with a pH of about 2, but once metabolized it actually becomes alkaline with a pH well above 7. So, outside the body, anyone can see that lemon juice is very acidic.
Spices such as cinnamon, curry powder, ginger, mustard and chili pepper are among the most alkaline. Including these spices during the preparation of other alkaline foods such as vegetables or fruits can be an easy way to incorporate multiple alkaline food sources in one meal.

These words are in many cases interchangeably used: an alkaline solution/compound is the same as a basic solution/compound. But you can specify "alkali" to refer to those bases that are soluble in water and that are salts of alkaline or alkaline earth metals too.
Cancer cells can't live in a high alkaline environment and the immediate areas in your body surrounding the cancer cells can become acidic. The thinking follows that if your body is more alkaline, you won't get cancer.
An alkali also can be defined as a base that dissolves in water. A solution of a soluble base has a pH greater than 7.0. The adjective alkaline is commonly, and alkalescent less often, used in English as a synonym for basic, especially for bases soluble in water.

The chloride from the hydrochloric acid in sodium chloride does not hydrolyze, though, so sodium chloride is not basic. The difference between a basic salt and an alkali is that an alkali is the soluble hydroxide compound of an alkali metal or an alkaline earth metal.
