Fan-assisted conventional cooking blows air through the oven cavity, but the heat comes from the heating elements at the top and bottom of the inside of the cavity. Convection cooking circulates the air from the cavity over a separate heating element that is not inside of the cavity.
- Both conventional and convection ovens can be heated with gas or electricity, but the heat distribution differs. The heat source in a conventional oven is stationary, usually radiating from the bottom, while in a convection oven a fan circulates the hot air all around the place.

- A fan assisted oven is an oven with heating elements in the oven (top and/or bottom) and a fan at the back. These can be either electric or gas ovens. However some people think that cookies and bread cook better in a more conventional oven as they do not benefit from the dryer air in a convection oven.
- Metal will not allow microwaves to penetrate; the food behind the metal will not be cooked. The metal could also cause arcing in the oven. Microwave convection ovens can use metal and foil safely during the convection cooking. Do not completely cover any food item with aluminum foil.
