Even better, 43 percent of a pork rind's fat is unsaturated, and most of that is oleic acid—the same healthy fat found in olive oil. Because the rinds are cooked and puffed in a microwave instead of deep-fried, each serving contains only 4 g fat—meaning they're lower in calories and less greasy than regular pork rinds.

- Pork rinds are the skin of a pig, usually fried or roasted. As you might guess, it's not the skin of the pig that's the problem, but the way it's cooked. - Place crackling rind-side up onto a rack over a shallow baking dish. Brush well with oil. Sprinkle generously with salt. Roast for 40 to 50 minutes, or until small bubbles form on surface and rind is golden and crisp.
