Is Chipotle Aioli vegan?
My favorite dip – besides ketchup, obviously – is chipotle aioli. It's creamy, it's salty, it's spicy – it's everything. This is my 5-ingredient, vegan, gluten-free restaurant-inspired version. The rest is simple: lemon juice, salt, water (or almond milk), and a chipotle pepper in adobo sauce.
For the Cajun aioli: In a bowl, whisk together the mayonnaise, lemon juice and Cajun seasoning until combined. Fold in the green onions, cover and refrigerate until ready to serve. For the fried pickles: Combine the sour cream and pickle juice in a shallow dish.

Chipotle mayo is a pretty hot condiment, and I'll say its popularity is well-deserved. With just a few ingredients, you can create a complex mixture of spicy, cool, earthy, and smoky that becomes an excellent spread for sandwiches and burgers, or a dip for fries, chips, and veggies.
- This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat.
- This creamy chipotle sauce is made with adobo chipotles, plain yogurt or Mexican crema, garlic, and lime juice. Chipotles are actually smoked dried jalapeños. I used canned chipotles in adobo for this recipe, which means the peppers are soaked in tomato based sauce.
- 1/2 cup mayonnaise, preferably Japanese.
- 2 tablespoon Sriracha hot sauce, plus more to taste.
- 1 teaspoon freshly squeezed lime juice (optional)
