How long does cheese last in the fridge once opened?

Properly stored, an opened chunk of cheddar cheese will last for 3 to 4 weeks in the refrigerator. Is an opened chunk of cheddar cheese still safe after the "sell by" date or "best by date" on the package?

Can cheese ever go bad?

Cut the mold away and eat the rest. Basically: aside from the fresh cheeses, cheese doesn't really go bad simply from age, and if there's other factors (eg lack of refrigeration) that have made it go bad the fact that your cheese tastes like crap should be a tipoff. If it still tastes good, eat it.
