How are eggs graded?

When grading eggs, both the interior and exterior quality is measured. This process does not take into account weight or shell color. According to USDA guidelines, eggs are graded and labeled as AA, A, and B. U.S. Grade AA eggs are nearly perfect. The whites are thick and firm and the yolks are free from any defects.

  1. HEAT oven to 325°F. BREAK AND SLIP 2 eggs into each of two lightly greased 10-oz. ramekins or custard cups. SPOON milk evenly over eggs. SPRINKLE with salt and pepper.
  2. BAKE in 325°F oven until whites are completely set and yolks begin to thicken but are not hard, 10 to 12 minutes. SERVE immediately.
