The heartburn returns because the disease is unmasked by removal of the drug that controlled the symptom. Rebound secretion of excessive acid has a minimal, if any, effect in producing symptoms. This is good medicine because PPIs do not cure GERD or stop reflux. They simply control pain.

Thereof, can you just stop taking omeprazole?

Usually, you can stop taking omeprazole without reducing the dose first. If you've taken omeprazole for a long time speak to your doctor before you stop taking it. Stopping suddenly could make your stomach produce a lot more acid, and make your symptoms come back.
